Homemade energy bundles

Healthy snacks for when you are out and about

The supermarket is full of bars, gels and other power foods for when you are out and about. Can you also make a homemade alternative?

In addition to the completely natural classics such as apples & bananas, well-assorted supermarkets offer a vast selection of bars & co for when you're out and about. It's hard to choose: conventional muesli bar or high-tech power food bar? Lots of protein, little sugar, low fat, no fat, vegan, with sweeteners and extra energy? If you are in the mood for creative, homemade energy sources for your next hiking or biking tour, we have three self-created recipes for you.

Mountain cheese blueberry muffins (12 muffins)

 

  • 2 eggs
  • 1 large pinch of salt and a little pepper
  • 1 tbsp. preserved cranberries
  • 80 g butter, melted
  • 120 g wheat flour
  • 50 g chopped walnuts
  • 100 g mountain cheese
  • ½ pkg. baking powder
  • Some chives or parsley
  • ½ onion or spring onion

Beat the eggs until fluffy, season to taste. Fold in melted butter and remaining ingredients. Fill the mixture into muffin tins - bake at 180°C for about 20 minutes.

Blueberry banana bread

 

  • 150 g oat flakes (fine)
  • 2 tbsp blueberries, dried
  • 3 ripe bananas
  • 3 eggs, 1 pinch of salt
  • 1tbsp honey
  • 50 g hazelnuts, grated
  • 30 g coconut flakes1 small tsp. cinnamon
  • ½ Pkg. baking powder
  • 1 Pkg. Vanilla pudding powder
  • ½ a vanilla pod
  • 1 tbsp coconut oil

Puree the oat flakes with the dried blueberries. Puree the bananas. Mix in the remaining ingredients, stir everything together. Pour the mixture into a loaf mould. Bake at 170°C for about 40 minutes. Allow to cool completely before cutting.

Vegan Power Balls (for approx. 30 balls)

 

Basic mixture

  • 150 g oat flakes
  • 100 g dried fruit (whatever preferred such as: plums, apricots, raisins, blueberries, apple,…)
  • 50 g nuts (which preferred: walnuts, hazelnuts, pumpkin seeds)
  • For rolling: grated nuts

Variation Hazelnut

  • 2 tbsp hazelnut paste
  • 1 tbsp chopped hazelnuts
  • 1 tbsp coconut oil

Variation Flower Power

  • 1 tbsp preserved cranberries
  • 2 tbsp millet pops
  • 1 tbsp coconut oil
  • For rolling: dried blooms

Variation Chokos

  • 1 tbsp. Cocoa powder
  • 1 tbsp coconut oil
  • 1 tbsp coconut flakes
  • For rolling: chopped millet pops

Tip: depending on the consistency of the oat flakes and dried fruit, add a little more coconut oil if necessary.

 

Chop up the ingredients of the basic mixture. Pour into 3 separate bowls. Mix each with the ingredients of the variations. Leave to stand for at least 30 minutes. (place in a cool place). Form balls with moistened hands and roll out.
